Huế’s Clams Mixed Rice/Vermicelli (Cơm/Bún Hến) - Mẹ’s Way Style

2 cups of white rice
1 bag of rice vermicelli
2 pounds of clean uncooked clams
2 tablespoon cooking oil
2 teaspoon garlic minced
1/2 cup sliced green onion and cilantro
2 tablespoon of shrimp paste
1 cup of roasted peanut with skin
1 cups of roasted sesame seeds
Mẹ’s Way Chili Sauce
Vegetables and herbs:
_Green mango (or) green apple
_Wash the white rice 1-2 times with water.
_Add the white rice into a rice cooker.
_Pour water into the rice cooker and set up the time per its instruction.
_Simply add vermicelli to boiling water until noodles are slightly soft and flexible.
_Drain the noodles with cool water and let it sit until the noodles are dry.
_Place the clams onto a pot, then pour 2 cups of water into it, and boil the clams until their shells are all open.
_Let the clams cool down, then take out the clam meat.
_Decant gradually the clam broth into bowls 2-3 times. Every time discard about 3 tablespoons of bottom portion of the broth
_Boil the broth and set aside.
_Preheat 1 tablespoon of cooking oil in a pan over medium high heat.
_Add garlic to the pan and stir it until it has a light gold color.
_Add clam meat, sugar, black pepper, and fish sauce to taste.
_Sprinkle with green onion and cilantro and stir fry the mixture well.
_Remove the clam meat from the heat and set aside.
_Place shrimp paste into a bowl, then add 1 cup of water.
_Stir the mixture well, then let it sit for 5 minutes.
_Decant gradually the shrimp paste solution into a bowl, and discard about 1 tablespoon of bottom portion of the solution.
_Pour the decanted solution into a pot and bring it to boil.
_Remove it from heat and set aside.
_ Preheat 1 tablespoon of cooking oil in a pan over medium high heat.
_Add roasted peanut and stir it about 2 minutes.
_Remove it from head and set aside.
Vegetables and herbs
_Wash all the vegetable and herbs very well.
_Shred the mango, elephant ears, green mango (or) green apple the same size as the white vermicelli.
_Chop all herbs and lettuce the same size as the white vermicelli.
_Place chopped lettuce and herbs onto a bowl first.
_Add steam rice (or) vermicelli (or) both.
_Add clam meat in the middle.
_Add shredded mango, elephant ears, green mango (or) green apple around the bowl.
_Add roasted peanut, then roasted sesame seeds.
_Add rice crackers.
Prior to eating
_Add shrimp paste solution, clam broth, and Mẹ’s Way Chili Sauce to taste.
_Mix everything very well and enjoy.
